- 1½ cups granny smith apples, peeled and chopped
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¼ cup brown sugar
- 2 eggs
- ⅓ cup greek yogurt
- 1 teaspoon pure vanilla extract
- ½ cup milk
- 1¾ cup all purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
Instructions
- Peel and chop the granny smith apples into bite-sized pieces, then toss them with brown sugar, cinnamon, and nutmeg. Set aside.
- Preheat the oven to 350ºF. Line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, cream the softened butter with granulated sugar and brown sugar using an electric mixer. Add in the eggs one by one, mixing well after each addition. Stir in the greek yogurt, vanilla extract, and milk until combined.
- Sift over the liquid mixture the all-purpose flour, ground cinnamon, ground nutmeg, baking powder, and baking soda. Stir until just combined without overmixing.
- In the prepared loaf pan, pour half of the bread batter, then layer half of the apples on top. Pour the remaining batter over the apples, followed by the rest of the apples on top.
- Bake for 60-70 minutes, covering with aluminum foil halfway through to prevent over-browning.
- Once baked, allow the bread to rest in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
Notes
Ensure the apples are in larger bite-sized pieces to maintain texture in the bread.
Store any leftover bread in an airtight container at room temperature for up to three days.
For added flavor, consider adding chopped nuts or dried fruits into the batter.
