Description

Asparagus and Ham Quiche is a delicious blend of eggs, cream, and tender asparagus, creating a dish that’s perfect for brunch, quick dinners, or any occasion. With easy prep and rich flavors, it’s a go-to for homemade meals that satisfy everyone.

Ingredients

Scale
  • 1 recipe buttermilk pie crust
  • egg wash
  • 5 large eggs, at room temperature
  • ¾ cup (6 fl oz/180 ml) heavy cream
  • ½ cup (4 fl oz/120 ml) whole milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup (5 oz/142 g) asparagus, cut into 1-inch (3 cm) pieces
  • 1 cup (4 oz/115 g) diced ham
  • ½ cup (1 ½ oz/43 g) shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. On a floured surface, roll the buttermilk pie crust to an ⅛-inch (3mm) thick circle and line a 9-inch (23 cm) deep dish pie pan with it.
  3. Brush the edges with egg wash, then line the crust with parchment paper and fill it with pie weights (or dried rice or beans).
  4. Bake for 15–20 minutes, then remove the parchment and weights, and continue baking for 5–10 minutes until the bottom of the crust looks dry and starts to brown.
  5. Take it out of the oven and reduce the oven temperature to 325°F (165°C). Set the crust aside.

Notes

For best results, let the eggs and dairy come to room temperature before mixing.
Feel free to substitute the ham with leftover meats or vegetables for a different flavor.
Chill any unbaked crust that isn’t being used right away to prevent shrinking when baked.
