Description

This Birthday Cake Banana Bread is a fantastic blend of rich flavors and festive colors. It’s easy to prepare, featuring ripe bananas, sprinkles, and a delightful glaze, making it perfect for celebrations or casual afternoon treats.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar + 1 tablespoon for the pan
  • 2 teaspoons cake batter extract (or vanilla extract)
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup mashed ripe bananas (3 medium)
  • 1 1/2 cup all-purpose flour (180g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 1/2 cup rainbow jimmies
  • 1 cup powdered sugar
  • 5 teaspoons milk
  • 1-2 tablespoons rainbow jimmies


Instructions

  1. Preheat the oven to 350°F. Prepare a 9X5-inch loaf pan with non-stick spray and sprinkle with 1 tablespoon of granulated sugar.
  2. In a large bowl, beat the softened butter and sugar together until the mixture is light and creamy. Add cake batter extract, eggs, sour cream, and the mashed bananas, mixing until well combined.
  3. In another bowl, mix together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
  4. Fold in the rainbow jimmies gently. Pour the batter into the prepared loaf pan.
  5. Bake for 60-65 minutes or until a toothpick inserted in the center comes out with a few crumbs attached.
  6. Once baked, cool the bread in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
  7. In a small bowl, mix together the powdered sugar and milk. Drizzle this glaze over the cooled bread and top with additional rainbow jimmies, allowing it to set.

Notes

Use very ripe bananas for the best flavor and sweetness.
Feel free to substitute vanilla extract for cake batter extract if needed.
Store the bread in an airtight container to keep it fresh.
