Ingredients
Scale
- 1 ½ cups (126 g) graham cracker crumbs, about 10-12 crushed graham cracker sheets
- 6 tablespoons unsalted butter, melted
- ¼ cup (50 g) granulated sugar
- 2 packages (8 ounces each) cream cheese, room temperature
- 2 large eggs, room temperature
- ⅓ cup (67 g) granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 2 cups (250 g) fresh blackberries, halved if large
- ¾ cup (94 g) all-purpose flour
- ¼ cup (50 g) light brown sugar, packed
- ¼ teaspoon kosher salt
- 5 tablespoons unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper, allowing for overhang.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press this mixture firmly into the bottom of the prepared baking dish to form the crust.
- In another bowl, beat together the cream cheese, granulated sugar, eggs, vanilla extract, and kosher salt until smooth and creamy.
- Pour the cream cheese mixture onto the crust, smoothing it out evenly. Scatter the fresh blackberries over the top.
- In a separate bowl, mix the all-purpose flour, light brown sugar, kosher salt, and melted butter until crumbly. Sprinkle this mixture over the blackberries.
- Bake for 175 minutes or until the top is golden and the cheesecake is set. Allow to cool before slicing into bars.
Notes
For a firmer texture, refrigerate the bars overnight before serving.
Use fresh blackberries for the best flavor and appearance.
