  • 2 cups (250 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ cup (184 g) buttermilk, room temperature
  • ½ cup (1 stick / 113 g) unsalted butter, melted, slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a standard 12-cup muffin pan by lining with paper liners or greasing with nonstick cooking spray.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and baking soda and whisk together thoroughly.
  3. In another bowl, mix the buttermilk, melted butter, eggs, and vanilla extract until the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick and slightly lumpy; refrain from overmixing.
  5. Allow the batter to rest at room temperature for 15 minutes to hydrate the flour, which aids in creating taller muffin tops.
  6. Distribute the batter evenly among the muffin cups, filling them almost to the top.
  7. Bake in the preheated oven at 425°F for 5 minutes. Then, without opening the oven door, decrease the temperature to 350°F (175°C) and continue baking for an additional 12 to 15 minutes, or until a toothpick inserted into the muffin center comes out with a few moist crumbs.
  8. Take the muffin pan out of the oven and cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Store the muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
