  • ½ cup (1 stick / 113 g) unsalted butter, melted and slightly cooled
  • ¾ cup (150 g) light brown sugar, packed
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (110 g) finely grated carrots, lightly packed
  • 4 ounces cream cheese, room temperature
  • ½ cup (1 stick / 113 g) unsalted butter, room temperature
  • ¾ cup marshmallow fluff, or marshmallow creme
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt
  • 2 cups (250 g) confectioners’ sugar


Instructions

  1. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, kosher salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, mix melted butter with light brown sugar and granulated sugar until smooth. Add the egg and vanilla extract, whisking until combined.
  4. Stir in the grated carrots into the wet mixture.
  5. Incorporate the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  6. Use a 2-tablespoon cookie scoop to place portions of dough on the prepared baking sheets, maintaining 2 inches of space between each cookie.
  7. Bake for 10 to 12 minutes or until the edges are set, with slightly underbaked centers.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  9. Prepare the sandwich filling while the cookies cool.
