- 2 cups sugar
- 2 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 2 cups grated carrots
- 1 cup chopped walnuts
- 1/2 cup oil
- 3 eggs
- 17 oz can crushed pineapple with juice
- 3/4 cup raisins
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 3 1/2 cups powdered sugar
- 1 tsp vanilla
Instructions
- Preheat the oven to 350 degrees F and spray a 9×13 inch pan with non-stick spray.
- Grate 2 cups of carrots and set aside.
- In a large bowl, combine sugar, flour, cinnamon, baking soda, grated carrots, and chopped walnuts.
- Add oil, eggs, crushed pineapple (including juice), and raisins to the dry ingredients.
- Mix the ingredients well and pour the batter into the prepared pan.
- Bake for 35-40 minutes, or until a toothpick inserted comes out clean.
- While the cake is baking, prepare the frosting by mixing together softened cream cheese, softened butter, powdered sugar, and vanilla extract.
- Once the cake is cool, spread the cream cheese frosting evenly over the top.
Notes
Ensure the cream cheese and butter are softened for easy mixing.
You can substitute walnuts with pecans if desired.
