- 1/2 cup (113 g) unsalted butter-melted and slightly cooled
- 6 tablespoons (75 g) light brown sugar
- 1/2 cup (100 g) granulated sugar
- 1 large egg-room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups (196 g) all-purpose flour
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons (65 g) mini chocolate chips
- about 1 heaping cup (300g) nutella for filling
Instructions
- Preheat the oven to 350°F and grease a standard muffin tin with baking spray. Set aside.
- In a large bowl, combine the melted butter with both sugars and whisk until smooth. Add in the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add this to the wet mixture, stirring just until combined. Fold in the mini chocolate chips.
- Scoop one rounded tablespoon of dough into each muffin cavity, gently pressing down to flatten.
- Bake for 12 to 15 minutes until lightly golden around the edges. The centers will remain slightly soft.
- After baking, immediately press the center of each cookie cup to create an indent for filling. Let them cool completely in the pan.
- Once cooled, gently remove the cookies from the pan using a butter knife if necessary.
- Fill each cookie cup with Nutella or your preferred filling.
- Allow the filled cups to cool completely before storing in an airtight container.
