- 1 1/2 cups semi-sweet chocolate chips
- 1 1/4 + 3/4 cups heavy whipping cream, divided
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 tsp espresso powder

Instructions
- In a microwave-safe bowl, heat 3/4 cup of heavy whipping cream until it's just below boiling, approximately 30-45 seconds.
- Pour the hot heavy cream over the chocolate chips in a large bowl. Cover with a towel and let it sit for 5-7 minutes. Stir with a whisk or rubber spatula until the chocolate melts completely, then allow it to cool for 15-20 minutes, occasionally stirring.
- In a separate bowl, whisk 1 1/4 cups of heavy whipping cream with a hand mixer or stand mixer until soft peaks form.
- Add powdered sugar, vanilla extract, and espresso powder to the whipped cream. Continue whisking until stiff peaks form.
- Set aside 1/2 cup of the whipped cream for later, then gently fold the rest into the chocolate mixture until fully combined without losing airiness.
- Divide the mousse into 6 dishes of your choice. Chill in the refrigerator for at least 3-4 hours before serving.
- When ready to serve, top with reserved whipped cream and fresh berries. Optionally dust with cocoa powder or chocolate shavings made from a chocolate bar using a grater or vegetable peeler.
- Store any leftovers in the refrigerator.
Notes
For an extra touch, use high-quality chocolate chips for a richer flavor.
You can make this mousse a day in advance and keep it refrigerated until ready to serve.
