- 1 ¾ cup (220 g) all-purpose flour
- 2 cups (400 g) granulated sugar
- ¾ cup (75 g) dutch cocoa powder
- 2 tablespoons (16 g) cornstarch
- 1 ½ teaspoons baking soda
- ¾ teaspoon table salt
- ⅔ cup (155 ml) neutral cooking oil
- ½ cup (113 g) unsalted butter melted
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup (236 ml) buttermilk
- ½ cup (118 ml) very hot or boiling water
- 1 oz (28 g) freeze dried strawberries
- 1 ½ cups (339 g) salted butter softened
- 6 cups (750 g) powdered sugar
- ⅓ cup (80 ml) heavy cream
- 4 oz (113 g) semisweet or dark chocolate bar chopped
- ½ cup (118 ml) heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Prepare three 8" cake pans by lining the bottoms with parchment paper and greasing/flouring the sides. Set aside.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, cornstarch, baking soda, and salt until well blended.
- Mix in the neutral cooking oil, melted butter, eggs, and vanilla extract until fully incorporated.
- Gradually add the buttermilk, stirring until mixed well.
- Slowly pour in the boiling water, mixing until you have a uniform batter.
- Divide the batter evenly between the prepared pans and bake for 24-28 minutes. A toothpick inserted into the center should come out clean with a few moist crumbs.
- Let the cakes cool in their pans for 15 minutes, then carefully invert them onto cooling racks to cool completely before adding frosting.
Notes
For best results, use room temperature eggs and buttermilk.
If your oven cannot fit all three pans, bake two at a time and leave one out until the others are done.
Rotate the pans halfway through baking if your oven bakes unevenly.
