Description

These decadent peanut butter frosted brownies feature rich dark chocolate and a creamy peanut butter frosting, making them a delightful treat for any occasion.


Ingredients

  • 1/4 cup dutch-process cocoa powder
  • pinch of espresso powder (optional)
  • 1/2 cup salted butter
  • 5 oz dark chocolate, chopped
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg + 1 egg yolk, room temperature
  • 1 1/2 tsp vanilla extract
  • 1/3 cup salted butter, softened
  • 7 tablespoons smooth peanut butter
  • 1 3/4 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 2-3 tablespoons heavy cream, as needed


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 pan with parchment paper.
  2. Melt the salted butter and dark chocolate together in a heatproof bowl using the microwave, stirring until smooth and warm.
  3. Stir in the brown sugar, followed by the granulated sugar. Then mix in the egg, egg yolk, and vanilla extract until glossy.
  4. Sift in the cocoa powder and flour, adding the optional espresso powder, and fold until no flour streaks remain.
  5. Pour the batter into the prepared pan, smoothing the top. Bake for 25-27 minutes until set with moist crumbs in the center.
  6. Allow the brownies to cool completely in the pan before lifting them out.
  7. For the frosting, beat together the salted butter and peanut butter until creamy. Gradually add powdered sugar and heavy cream to achieve a spreadable consistency, mixing in vanilla.
  8. Once the brownies have cooled, frost them evenly, swirling for a decorative touch if desired.
  9. Top with chopped peanuts, mini chocolate chips, or a drizzle of melted chocolate, and slice with a clean knife.

Ensure the brownie batter is not overmixed to maintain a fudgy texture.
