Description

These Fluffy Nutella Muffins are a delightful treat! With their light texture and rich, creamy Nutella center, they are perfect for breakfast or a cozy snack. Simple to make and incredibly delicious, they’ll satisfy any sweet tooth!


Ingredients

  • 1 ¾ cups all purpose flour
  • ¼ cup cake flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup neutral oil
  • 2 eggs, room temperature
  • 1/2 cup granulated sugar
  • ⅓ cup light brown sugar
  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 1 1/2 teaspoons vanilla extract
  • Nutella, of course


Instructions

  1. Preheat the oven to 425°F and line a 12-cup muffin pan with liners.
  2. In a medium bowl, whisk together the all-purpose flour, cake flour, baking powder, and salt.
  3. In a large bowl, whisk the sugars and oil until smooth, then add the eggs and whisk until silky. Stir in Greek yogurt, milk, and vanilla.
  4. Gently fold the dry ingredients into the wet batter until just combined.
  5. Spoon batter into each liner until halfway full, make a well in the center, and add a generous spoonful of Nutella.
  6. Top with more batter, almost filling the liner, and add a small dollop of Nutella on top. Lightly swirl with a toothpick.
  7. Bake at 425°F for 6 minutes, then reduce to 350°F and bake for an additional 10 minutes, or until golden and springy.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Using room temperature eggs helps the batter mix more smoothly.
Do not over-mix the batter to ensure soft muffins.
These muffins are best enjoyed warm.
