- 1 ¾ cups all purpose flour
- ¼ cup cake flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup neutral oil
- 2 eggs, room temperature
- 1/2 cup granulated sugar
- ⅓ cup light brown sugar
- 1/2 cup Greek yogurt
- 1/2 cup milk
- 1 1/2 teaspoons vanilla extract
- Nutella, of course
Instructions
- Preheat the oven to 425°F and line a 12-cup muffin pan with liners.
- In a medium bowl, whisk together the all-purpose flour, cake flour, baking powder, and salt.
- In a large bowl, whisk the sugars and oil until smooth, then add the eggs and whisk until silky. Stir in Greek yogurt, milk, and vanilla.
- Gently fold the dry ingredients into the wet batter until just combined.
- Spoon batter into each liner until halfway full, make a well in the center, and add a generous spoonful of Nutella.
- Top with more batter, almost filling the liner, and add a small dollop of Nutella on top. Lightly swirl with a toothpick.
- Bake at 425°F for 6 minutes, then reduce to 350°F and bake for an additional 10 minutes, or until golden and springy.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
Using room temperature eggs helps the batter mix more smoothly.
Do not over-mix the batter to ensure soft muffins.
