- 70 grams jimmy sprinkles
Instructions
- Combine all ingredients except for the sprinkles and let rest for 30 minutes.
- Perform a stretch and fold technique.
- During the second stretch and fold after 30 minutes, incorporate the sprinkles.
- Continue with a third and fourth stretch and fold.
- Allow the dough to bulk ferment until it nearly doubles in size.
- Preshape the dough and let it rest for another 30 minutes.
- Shape the dough and place it into a banneton.
- Let it rise at room temperature for one hour, then freeze for 20 minutes or refrigerate overnight.
- Preheat the oven to 450°F, using a steel or Dutch oven; place a silver cookie sheet on the bottom rack.
- Bake the bread in the oven, lowering the temperature to 425°F immediately, and bake covered for 30 minutes.
- Uncover and reduce the temperature to 400°F, then continue baking for an additional 10-15 minutes, until the internal temperature reaches 190°F.
Notes
Using a steel or Dutch oven helps create steam, which improves the crust.
For a stronger sprinkle flavor, consider adding a bit more sprinkles during mixing.
Make sure the dough has risen adequately before shaping for the best texture.
