Description

Experience the joy of Funfetti Sprinkle Bread! This delightful treat boasts a unique flavor from the combination of vanilla and almond extracts, along with colorful sprinkles. It’s easy to prepare and ideal for celebrating special moments or simply enjoying a sweet slice with your morning coffee.


Ingredients

Scale
  • 120 grams starter
  • 340 grams water
  • 50 grams granulated sugar
  • 4 grams vanilla bean paste
  • 2 grams almond extract
  • 10 grams salt
  • 500 grams bread flour
  • 70 grams jimmy sprinkles


Instructions

  1. Combine all ingredients except for the sprinkles and let rest for 30 minutes.
  2. Perform a stretch and fold technique.
  3. During the second stretch and fold after 30 minutes, incorporate the sprinkles.
  4. Continue with a third and fourth stretch and fold.
  5. Allow the dough to bulk ferment until it nearly doubles in size.
  6. Preshape the dough and let it rest for another 30 minutes.
  7. Shape the dough and place it into a banneton.
  8. Let it rise at room temperature for one hour, then freeze for 20 minutes or refrigerate overnight.
  9. Preheat the oven to 450°F, using a steel or Dutch oven; place a silver cookie sheet on the bottom rack.
  10. Bake the bread in the oven, lowering the temperature to 425°F immediately, and bake covered for 30 minutes.
  11. Uncover and reduce the temperature to 400°F, then continue baking for an additional 10-15 minutes, until the internal temperature reaches 190°F.

Notes

Using a steel or Dutch oven helps create steam, which improves the crust.
For a stronger sprinkle flavor, consider adding a bit more sprinkles during mixing.
Make sure the dough has risen adequately before shaping for the best texture.
