Description

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground nutmeg
  • 1 ¼ cups (306 g) whole milk
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon vanilla extract
  • 2 cups (250 g) confectioners’ sugar
  • 4 to 5 tablespoons milk, or heavy cream for richer glaze
  • 1 teaspoon vanilla extract
  • 1 pinch kosher salt, optional


Instructions

  1. Preheat the oven to 350°F. Spray an 8 ½ x 4 ½-inch loaf pan with nonstick cooking spray.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, kosher salt, and ground nutmeg.
  3. In another bowl, whisk together the whole milk, large egg, melted unsalted butter, and vanilla extract until well blended.
  4. Add the milk mixture to the flour mixture and stir gently until just combined. Avoid overmixing; the batter should remain slightly runny.
  5. Transfer the batter into the prepared loaf pan, spreading it evenly.
  6. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out with a few crumbs and the top is golden brown.
  7. Once baked, take the bread out of the oven and let it cool in the pan for about 10 minutes. Carefully remove the bread and place it on a wire rack set over parchment paper to catch drips.

Notes

For a richer glaze, use heavy cream instead of milk.
Be careful not to overmix the batter to ensure a light texture.
Allow the glazed bread to cool completely before slicing for the best texture.
