Ingredients
Scale
- ½ cup salted butter softened
- 1 cup vegetable oil
- 1¾ cups granulated sugar
- 3 large eggs
- 1 extra egg yolk
- 1 cup buttermilk
- 2 teaspoons pure vanilla extract
- 2-3 teaspoons green gel food coloring
- 3 cups cake flour well measured
- 5 teaspoons cocoa powder
- ¾ teaspoon baking soda
- ¼ teaspoon baking powder
- 1 cup salted butter softened
- 4 8-oz packages cream cheese, softened
- 8 –9 cups powdered sugar sifted
- 2 –3 teaspoons milk to adjust consistency
- 3 teaspoons pure vanilla extract
Instructions
- Preheat your oven to 350°F and prepare two 9-inch cake pans by greasing and dusting them with flour.
- In a large bowl, beat the salted butter, vegetable oil, and granulated sugar together until creamy and glossy.
- Add the eggs one by one, then add the extra egg yolk and vanilla extract, beating until smooth.
- In a separate bowl, whisk together the cake flour, cocoa powder, baking soda, and baking powder.
- Alternately mix in the dry ingredients and buttermilk into the wet mixture, starting and ending with the dry ingredients, folding gently.
- Add green gel food coloring to the mixture and adjust until you achieve your desired hue.
- Divide the batter between the prepared pans and smooth the tops. Bake for 30-32 minutes or until a toothpick comes out clean.
- Allow the cakes to rest briefly before transferring them to a wire rack to cool completely. Trim any domed tops if necessary.
- For the frosting, beat the cream cheese and butter until creamy, then gradually add powdered sugar until smooth.
- Stir in vanilla and a splash of milk to achieve a silky consistency. Adjust sweetness to taste.
- Once cooled, layer the cake with frosting in between and apply it to the top and sides. Decorate as desired and serve.
Notes
Ensure that your ingredients are at room temperature for the best texture.
Sift the powdered sugar for a smoother frosting if desired.
The cake can be made ahead of time and frosted just before serving.
