  • 4 large ripe bananas, mashed (about 1 ¼ to 1 ½ cups)
  • ¾ cup (255 g) honey
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312.5 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt


Instructions

  1. Preheat your oven to 325°F and prepare a 9×5-inch loaf pan by spraying it with nonstick cooking spray or lining it with parchment paper.
  2. Melt the butter and let it cool slightly.
  3. In a large bowl, mash the bananas with a fork until they are mostly smooth.
  4. Add the melted butter, honey, egg, and vanilla to the mashed bananas. Whisk everything together until well combined.
  5. In another bowl, whisk together the flour, baking soda, baking powder, and kosher salt.
  6. Combine the dry ingredients with the banana mixture, stirring gently with a spatula or wooden spoon until just incorporated. Be careful not to overmix.
  7. Pour the batter into the prepared loaf pan and smooth out the top.
  8. Bake for 65 to 75 minutes. After 40 minutes, check the loaf; if it’s browning too quickly, cover loosely with aluminum foil to prevent burning while it finishes baking.
  9. Bake until a toothpick inserted in the center comes out with a few moist crumbs, indicating it’s done.
  10. Let the bread cool in the pan for 10 to 15 minutes, then transfer it to a wire rack to cool completely before slicing.
