  • 1 ¼ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon orange zest
  • ½ cup (4 oz/115 g) butter , cold and diced
  • 1 large egg
  • ½ cup (4 fl oz/120 ml) buttermilk

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Incorporate the cold, diced butter into the flour mixture with a pastry blender or your fingers until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg and buttermilk, then fold into the dry ingredients.
  5. Gently combine until just mixed, then transfer the dough to the baking sheet and shape it into a 7-inch disk, about 1-inch high.
  6. Cut the disk into 8 wedges, ensuring there is about 1 inch between each piece. Brush the tops with egg wash.
