This Irish Soda Bread boasts an irresistible flavor with a simple preparation. Made with buttermilk and butter, it’s perfect for quick dinners and wholesome meals.

- 1 3/4 cups buttermilk
- 1 egg
- 4 1/4 cups flour
- 3 tbsp sugar
- 1 tsp baking soda
- 1 tsp salt
- 5 tbsp butter, cold & cubed
Instructions
- Preheat the oven to 400°F and prepare a 10-12 inch cast iron skillet.
- In a bowl, whisk together the buttermilk and egg; set aside.
- In another bowl, whisk the flour, sugar, baking soda, and salt together.
- Incorporate the cold, cubed butter into the dry ingredients using a fork until it resembles pea-sized crumbs.
- Stir in the buttermilk and egg mixture until combined.
- On a lightly floured surface, turn out the dough and shape it into a ball, kneading just until moistened. Add more flour if the dough is too sticky.
- Place the dough in the skillet and score a deep 'X' on top with a sharp knife.
- Bake for 45-55 minutes or until golden brown and cooked through. If browning too quickly, loosely cover with aluminum foil.
- Allow to cool for 10 minutes on a wire rack before slicing.
Notes
For a slightly sweet version, add a touch more sugar to the dough.
You can also incorporate raisins or sultanas for added flavor.
Be careful not to over-knead the dough.
