- 2 ¼ cups graham cracker crumbs
- 7 tbsp unsalted butter melted
- 2 tbsp light brown sugar
- ¼ teaspoon salt
- 3 8 oz cream cheese packs, softened
- 1 ½ cups powdered sugar sifted
- 4-5 tsp fresh key lime zest
- 5 tbsp fresh key lime juice
- 1 ¼ cup heavy whipping cream chilled
- 1 ½ tsp vanilla extract
Instructions
- Mix the graham cracker crumbs, melted butter, brown sugar, and salt until it resembles damp sand.
- Press the mixture into a 9-inch springform pan, covering the bottom and sides. Use the bottom of a glass for a smooth finish.
- Beat the softened cream cheese in a bowl until smooth and creamy, scraping the sides as needed.
- Add the powdered sugar, key lime juice, zest, and vanilla extract, mixing until well combined.
- Slowly pour in the chilled heavy cream, mixing gently then whip until the filling is light and holds its shape.
- Spread the filling over the crust and smooth the top with a spatula. Cover and chill for at least six hours until firm.
- Remove the cheesecake from the pan, cut into slices, and optionally garnish with lime zest or fresh berries.
Notes
For a stronger lime flavor, adjust the key lime juice to your taste.
Allow the cheesecake to chill overnight for best results.
