Description

These Lemon Crinkle Cookies are a delightful treat bursting with citrus flavor. With fresh lemon juice and zest, this easy recipe creates light and chewy cookies that are perfect for every gathering.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ cup (1 ½ sticks / 170 g) unsalted butter, softened to room temperature
  • 1 cup (200 g) granulated sugar
  • 1 large egg, room temperature
  • 2 tablespoons fresh lemon juice, room temperature
  • 3 teaspoons lemon zest, about 1 medium lemon, zested
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 cup (120 g) confectioners’ sugar


Instructions

  1. Whisk together the flour, baking soda, and salt in a medium bowl and set aside.
  2. Beat the butter and granulated sugar in a large bowl with a hand or stand mixer on medium-high speed until light and creamy, about 3 minutes.
  3. Add in the egg, lemon juice, lemon zest, vanilla extract, and lemon extract and beat on high until combined, about 1 minute.
  4. Mix the flour mixture into the wet ingredients on low speed until just combined, resulting in a thick and creamy dough.
  5. Pour confectioners' sugar into a small bowl for rolling the cookies.
  6. Scoop 1-tablespoon portions of dough onto a parchment-lined baking sheet. Roll each ball in confectioners’ sugar until coated, then place back onto the baking sheet.
  7. Cover the dough balls and refrigerate for 1 hour.
  8. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Place the dough balls on the baking sheets, spacing them 2 inches apart.
  10. Bake for 11 to 13 minutes, until the edges are set but centers remain soft.
  11. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  12. Store the cookies in an airtight container at room temperature for up to a week.

Notes

For extra crinkle effect, roll the cookies in confectioners’ sugar a second time before baking.
Make sure your butter is softened to room temperature for the best texture in your cookies.
These cookies can also be frozen for up to 2 months if stored properly.
