Description

Ingredients

  • 1 2/3 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp peppermint extract
  • 1/2 cup chocolate chips
  • 1/2 cup mint chips
  • 1/2 cup andes baking chips


Instructions

  1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.
  2. In a small bowl, whisk the flour, baking soda, and salt together, then set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and sugar until fluffy and combined.
  4. Add the egg and peppermint extract into the mixture and stir well.
  5. Gradually incorporate the flour mixture until everything is well combined.
  6. Fold in the chocolate chips, mint chips, and Andes baking chips gently until mixed.
  7. Scoop heaping 1 1/2 tablespoons of cookie dough onto the prepared baking sheet, ensuring space between each cookie for spreading.
  8. Bake in the preheated oven for 9-11 minutes.
  9. Once baked, press a few additional chocolate chips, mint chips, and Andes baking chips into the tops of the cookies immediately after taking them out of the oven.

Notes

For a stronger mint flavor, consider using a bit more peppermint extract.
Cool the cookies on a wire rack to maintain their chewy texture.
