Instructions

- In a large bowl, beat the softened butter, brown sugar, and sugar until fluffy and combined.
- Add the egg and peppermint extract into the mixture and stir well.

- Fold in the chocolate chips, mint chips, and Andes baking chips gently until mixed.
- Scoop heaping 1 1/2 tablespoons of cookie dough onto the prepared baking sheet, ensuring space between each cookie for spreading.
- Bake in the preheated oven for 9-11 minutes.
- Once baked, press a few additional chocolate chips, mint chips, and Andes baking chips into the tops of the cookies immediately after taking them out of the oven.
Notes
For a stronger mint flavor, consider using a bit more peppermint extract.
