Description

Savor the delightful flavors of No-Bake Peanut Butter Oat Bars. Made with creamy peanut butter, these bars are incredibly easy to prepare and are perfect for a quick snack or a healthy dessert option!


Ingredients

  • ½ cup 1 stick / 113 g unsalted butter
  • 1 cup (200 g) packed brown sugar
  • ½ cup milk
  • 1 cup (258 g) creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 pinch kosher salt
  • 3 cups (270 g) old-fashioned rolled oats
  • 1 ½ cups (273 g) semi-sweet chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. Line an 8×8-inch baking pan with parchment paper, allowing overhang for easy removal.
  2. In a medium saucepan over medium heat, melt the butter, brown sugar, and milk until smooth. Bring to a boil and cook for 1 minute, stirring constantly.
  3. Remove from heat and stir in the peanut butter, vanilla extract, and salt until smooth.
  4. Add the old-fashioned oats, stirring until evenly coated.
  5. Firmly press the mixture into the prepared pan, creating an even layer.
  6. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring until melted and smooth.
  7. Spread the melted chocolate evenly over the oat layer.
  8. Refrigerate for 30 to 45 minutes, or until set.
  9. Lift the bars from the pan with the parchment and cut into squares.

Notes

Store bars in an airtight container in the refrigerator.
Feel free to add nuts or dried fruits for extra texture and flavor.
These bars can be frozen for longer shelf life.
