- 2 large seedless oranges, preferably organic
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- ¼ cup brown sugar
- 3 large eggs, room temperature
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup freshly squeezed orange juice
- 2 tablespoons granulated sugar
- powdered sugar, for dusting
Instructions
- Preheat your oven to 350ºF and prepare an 8-inch cake pan by lining the bottom and sides with parchment paper.
- Cut the oranges into smaller pieces, removing any seeds, and blend in a food processor until smooth. If necessary, remove excess pith before blending.
- Add butter, granulated sugar, brown sugar, and eggs to the food processor, processing until smooth. Stir in flour, baking powder, and salt, leaving some butter specks if visible.
- Pour the batter into the prepared cake pan and bake for 50 minutes until cooked through.
- To create the glaze, simmer orange juice and granulated sugar in a small saucepan for 4 to 5 minutes until syrupy.
- Once the cake is out of the oven, brush the warm cake with the orange glaze to soak in flavor.
- Allow the cake to cool completely, then dust with powdered sugar before slicing.

Use organic oranges for the best flavor and quality.
For added richness, let the butter come to room temperature before mixing.
