Ingredients

  • ½ cup room temp salted butter
  • ½ cup peanut butter
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 tsp vanilla bean paste
  • 1 egg
  • 1 tsp. baking soda
  • ¼ tsp. kosher salt
  • 2 tsp. cornstarch
  • c. quick oats
  • 1 c. all-purpose flour
  • 200 g. mini m&ms
  • 200 g. mini semi-sweet chocolate chips
  • 50 g. peanut butter chips
  • 50 g chopped peanut butter cups
  • plus extras of each for out of the oven decorating


Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, beat the room temperature butter and peanut butter together until well combined.
  3. Add the light brown sugar, granulated sugar, vanilla bean paste, and egg, mixing until the mixture is smooth.
  4. In another bowl, mix the flour, oats, kosher salt, baking soda, and cornstarch. Gradually add this dry mixture to the wet mixture and stir until combined.
  5. Fold in the mini M&Ms, chocolate chips, peanut butter chips, and chopped peanut butter cups gently into the batter.
  6. Scoop out 4-ounce mounds of the cookie dough onto a baking sheet. You can bake six at a time. Roll them into balls and press slightly to create a textured surface.
  7. Bake in the preheated oven for 12 to 13 minutes. Remove from the oven and top with extra goodies while warm.

Notes

For a chewier cookie, slightly underbake them and let them rest on the baking sheet for a few minutes before transferring to a wire rack.
Make sure the butter is at room temperature for easier mixing.
Feel free to add your favorite candies or nuts for a personalized touch.
