Description

Revani is a delightful semolina cake infused with orange zest and syrup that makes for a perfect dessert. Easy to prepare, it’s a sweet addition to any meal, sure to impress family and friends!


Ingredients

Scale
  • 4 eggs, separated
  • ¾ cup 140 g sugar
  • ½ cup 60 g all purpose flour
  • ½ cup 100 g semolina, coarse
  • 1.5 teaspoon baking powder
  • 3 tbsp 40 ml olive oil
  • orange zest
  • 2 cups 500 ml water
  • juice from 1 orange
  • ½ cup 100 g sugar
  • orange extract
  • ground pistachio, optional for decoration


Instructions

  1. Grease a large rectangular baking pan (about 11 x 8 inch / 27 x 20 cm).
  2. In a bowl, combine the flour, semolina, and baking powder; mix well and set aside.
  3. Whip the egg whites in a large bowl until stiff peaks form.
  4. In another bowl, beat the egg yolks with sugar and orange zest until thick and pale. Gradually add olive oil, mixing until absorbed.
  5. Gently incorporate the dry mixture into the yolk mixture, alternating with portions of the whipped egg whites.
  6. Once the batter is smooth, transfer it to the prepared pan and bake for about 25 minutes, until golden brown and a toothpick comes out clean.
  7. Let the revani cool for about 30 minutes before slicing, then slowly pour the syrup over it and let it absorb.

Notes

Make sure the baking pan is well-greased to prevent sticking.
For added flavor, consider using fresh orange juice and zest.
Ground pistachio can be used as a decorative topping after the syrup is absorbed.
