Description
Revani is a delightful semolina cake infused with orange zest and syrup that makes for a perfect dessert. Easy to prepare, it’s a sweet addition to any meal, sure to impress family and friends!

- 4 eggs, separated
- ¾ cup 140 g sugar
- ½ cup 60 g all purpose flour
- ½ cup 100 g semolina, coarse
- 1.5 teaspoon baking powder
- 3 tbsp 40 ml olive oil
- orange zest
- 2 cups 500 ml water
- juice from 1 orange
- ½ cup 100 g sugar
- orange extract
- ground pistachio, optional for decoration
Instructions
- Grease a large rectangular baking pan (about 11 x 8 inch / 27 x 20 cm).
- In a bowl, combine the flour, semolina, and baking powder; mix well and set aside.
- Whip the egg whites in a large bowl until stiff peaks form.
- In another bowl, beat the egg yolks with sugar and orange zest until thick and pale. Gradually add olive oil, mixing until absorbed.
- Gently incorporate the dry mixture into the yolk mixture, alternating with portions of the whipped egg whites.
- Once the batter is smooth, transfer it to the prepared pan and bake for about 25 minutes, until golden brown and a toothpick comes out clean.
- Let the revani cool for about 30 minutes before slicing, then slowly pour the syrup over it and let it absorb.
Notes
Make sure the baking pan is well-greased to prevent sticking.
For added flavor, consider using fresh orange juice and zest.
Ground pistachio can be used as a decorative topping after the syrup is absorbed.
