Description

Rolo Ritz Cracker Cookies offer an irresistible blend of sweet and salty flavors. With simple prep and key ingredients like Rolo candies and Ritz crackers, these cookies are perfect for snack lovers looking for a quick and delightful treat.

  • 48 ritz crackers divided use
  • 24 rolo candies unwrapped
  • ⅓ cup milk chocolate or semisweet chocolate chips
  • ½ teaspoon coconut oil or vegetable shortening
  • flaky salt optional


Instructions

  1. Preheat your oven to 250°F and line a large baking sheet with parchment paper.
  2. Arrange 24 Ritz crackers on the baking sheet with the top side facing down. Place a Rolo candy on each cracker, then bake for 5 minutes.
  3. Once baked, remove the sheet from the oven and let it cool for 10 minutes before topping each Rolo with a second Ritz cracker to form a sandwich.
  4. Carefully move the cookies to a wire rack placed on top of parchment paper to catch any melted chocolate.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat at 50% power in 30-second increments, stirring until smooth. Transfer to a piping bag, then drizzle over the cookies. Optionally, sprinkle with flaky salt before allowing the chocolate to set completely.

Notes

For an extra crunch, consider adding chopped nuts between the cookie layers.
These cookies can be stored in an airtight container for up to a week.
