Description

Salted Peanut Chews offer a delightful mix of sweet and salty in every bite. With easy prep using peanut butter cookie mix, this treat is perfect for gatherings or a quick snack. The combination of marshmallows, peanut butter chips, and crunchy peanuts creates an irresistible flavor that satisfies any craving!


Ingredients

  • 1 pouch betty crocker peanut butter cookie mix, 1 lb. 1.5 oz size
  • 3 tbsp vegetable oil
  • 1 tbsp water
  • 1 egg
  • 3 cups miniature marshmallows
  • 2/3 cup light corn syrup
  • 1/4 cup butter
  • 1 tbsp vanilla extract
  • 1 10 oz. bag peanut butter chips
  • 2 cups rice krispies cereal
  • 2 cups peanuts, salted


Instructions

  1. Preheat your oven to 350 degrees and grease a 9×13 pan. Set it aside.
  2. In a large bowl, combine the cookie mix, vegetable oil, water, and egg until a soft dough forms. Press this mixture evenly into the bottom of your greased pan.
  3. Bake for 12 to 14 minutes or until set. Once removed from the oven, immediately sprinkle the marshmallows on top and return it to the oven for 1 to 2 minutes until the marshmallows puff up.
  4. In a large pot, add the corn syrup, butter, vanilla extract, and peanut butter chips. Cook over low heat, stirring constantly until everything is melted and well combined.
  5. Take the mixture off the heat and stir in the Rice Krispies and peanuts. Spoon this evenly over the puffed marshmallows, making sure to cover them completely.
  6. Allow to cool until set, or refrigerate for 30 minutes before cutting into bars.

Notes

Make sure to cool completely before cutting to ensure neat bars.
Store any leftovers in an airtight container to maintain freshness.
For extra flavor, consider adding chocolate chips or using mixed nuts!
