Description

These Sourdough Strawberry Cream Cheese Buns are a delightful treat featuring fluffy dough, sweet strawberries, and creamy filling. Perfect for any occasion!


Ingredients

  • 2 1/4 teaspoons active dry yeast (7 g)
  • 1/4 cup granulated sugar (50 g)
  • 2 large eggs (about 100 g)
  • 1 teaspoon vanilla extract (5 ml)
  • 1/2 teaspoon salt (3 g)
  • 1 1/4 cups sourdough discard (300 g)
  • 3 1/3 cups bread flour (400 g)
  • 8 tablespoons salted butter, room temperature (113 g)
  • 2 cups diced strawberries (about 300 g)
  • 3-4 tablespoons granulated sugar (3850 g)
  • 12 ounces full-fat cream cheese, softened (340 g)
  • 1 teaspoon vanilla extract (5 ml)
  • 1 cup powdered sugar (120 g)
  • 1 large egg, whisked (50 g)
  • 1/4 cup all-purpose flour (30 g)
  • 2 tablespoons salted butter, softened (28 g)
  • 3 tablespoons brown sugar (38 g)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons milk


Instructions

  1. In a stand mixer bowl, mix warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. Add eggs and vanilla to the yeast mixture and combine well.
  3. Mix in the sourdough discard and salt, followed by the bread flour. Knead the dough until smooth.
  4. Let the dough rise until doubled in size, about 1 hour.
  5. In another bowl, combine diced strawberries with granulated sugar and let them sit to macerate.
  6. Prepare the cream cheese filling by mixing softened cream cheese, powdered sugar, and vanilla until smooth.
  7. Roll out the dough into a large rectangle, spread the cream cheese mixture, and layer with strawberries.
  8. Slice into buns and place in a greased baking dish. Let rise again before baking.
  9. Preheat oven to 350°F (175°C) and bake the buns for 25-30 minutes until golden brown.

Notes

Ensure your milk is warm, not hot, to activate the yeast.
