- 2 small ripe bananas mashed
- 5 tbsp unsalted butter softened
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg room temperature
- 1 tbsp milk
- 1 tsp vanilla extract
- 1 cup all-purpose flour properly measured
- ½ tsp salt
- ¾ tsp baking powder
- ¼ tsp baking soda
- 6 fresh strawberries chopped
Instructions
- Preheat the oven to 350°F and line a muffin tin with paper cups. Mash the bananas until smooth and chop the strawberries into small pieces.
- In a large bowl, cream together the butter, light brown sugar, and granulated sugar until soft. Mix in the egg, milk, mashed bananas, and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Combine the dry ingredients with the wet ingredients gently until just mixed.
- Fold in the chopped strawberries until evenly distributed throughout the batter.
- Let the batter sit in the muffin tin briefly, then transfer to a wire rack to cool. Top with additional strawberry pieces if desired for presentation.
- Bake the muffins for 18 minutes, or until golden brown and a toothpick inserted comes out clean. Let cool in the tin for a few minutes before moving to the rack.
Notes
Overmixing the batter can lead to tough muffins; mix just until combined.
For extra sweetness, add more strawberries or a sprinkle of sugar on top before baking.
