- 1 lb (450g) fresh strawberries, sliced
- ¼ cup (50g) granulated sugar-for strawberries
- 5 tablespoons (75g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup (65g) granulated sugar
- 1/2 cup + 2 tablespoons (150 ml) milk
- ½ teaspoon vanilla extract (optional)
Instructions
- In a bowl, mix the sliced strawberries with ¼ cup of sugar and set aside for at least 10 minutes to allow the juices to be released.
- Preheat your oven to 350°F (180°C).
- Place butter in an 8×8-inch baking dish and put it in the oven for 5–10 minutes until fully melted.
- While the butter melts, whisk together the flour, baking powder, salt, and sugar in a bowl. Then add the milk and vanilla, stirring until just combined. The batter will be thin.
- Carefully take the baking dish out of the oven and pour the batter over the melted butter, ensuring it covers the bottom of the pan without stirring.
- Spoon the prepared strawberries evenly over the batter. Avoid stirring.
- Bake for 30–40 minutes until the top is golden brown and the strawberry juices are bubbling at the edges.
- Allow cooling for 10–15 minutes before serving.
Notes
For extra flavor, consider adding a pinch of cinnamon to the batter.
Serve warm with a scoop of vanilla ice cream for an added treat.
Leftovers can be refrigerated and reheated in the oven.
