- Line a rimmed baking sheet with parchment paper and set aside.
- In a heavy-bottomed 1-quart saucepan over medium heat, melt the butter halfway, then stir in the sugar and salt.
- Whisk gently until the butter fully melts and the mixture is smooth.
- Bring the mixture to a boil while stirring occasionally. Expect bubbling and frothing at first.
- Stir constantly as the toffee thickens, aiming for a creamy, glossy texture and tan-brown color, about 10 minutes. For precision, use a candy thermometer and aim for 305°F to 330°F (hard crack stage). Be cautious not to exceed 340°F to avoid bitterness.
- Pour the hot mixture onto the prepared baking sheet and spread into an even layer quickly, as it hardens fast.
- Allow the toffee to set in a cool, dry place for at least 20 minutes until fully hardened.
- Once set, place the toffee in a resealable bag and break it into small bits using a rolling pin, heavy saucepan, or mallet, or chop it on a cutting board with a serrated knife.
