These Twix Thumbprint Cookies offer a delightful combination of buttery goodness, gooey caramel, and rich chocolate. Ideal for easy baking sessions!

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1/2 teaspoon table salt
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all purpose flour (360g)
- 24 soft caramel candies, unwrapped (i used werthers originals)
- 1 tablespoon + 1 teaspoon heavy whipping cream
- 1/4 cup dark chocolate melting wafers
Instructions
- In a large mixing bowl, beat the softened butter with granulated and brown sugars until smooth and creamy.
- Add in the salt, egg, and vanilla, blending until fully incorporated.
- Gradually mix in the flour; the dough will be crumbly at first but keep mixing until it forms a soft consistency.
- Using a 1-tablespoon scoop, form 24 even dough balls and arrange them on a parchment-lined tray.
- To create an indent in each ball, dip a teaspoon measuring spoon in flour and press gently. Chill the tray in the refrigerator for 30 minutes.
- Preheat the oven to 350°F while the dough is chilling.
- Bake 12 cookies at a time on a baking sheet and allow them to cool for 10 minutes on the pan before transferring to a wire rack.
- If necessary, use the teaspoon to re-indent the centers of the cookies carefully.
- In a small saucepan over low heat, combine the unwrapped caramels and cream; stir until the mixture is melted and creamy. Fill the cookie centers with this mixture and let set.
- In a microwave-safe bowl, heat the melting chocolate for 30 seconds; stir until smooth, reheating for additional 20-second intervals if needed. Spoon the melted chocolate into a plastic bag, cut off a corner, and drizzle over the cookies.
Notes
Make sure the butter is softened to room temperature for the best mixing results.
Chilling the dough helps maintain the cookie shape during baking.
