- 2 cups (260g) whole wheat flour, spooned & leveled
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6 tablespoons (85g) unsalted butter, melted and slightly cooled
- 2 large eggs, at room temperature
- 2 tablespoons (25g) packed light or dark brown sugar
- 1 and 3/4 cups (420g/ml) buttermilk
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your waffle maker on medium-high heat and the oven to 200°F (93°C). Set a wire rack on a baking sheet aside.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. Set it aside.
- In another large bowl, combine melted butter, eggs, and brown sugar by whisking them together. Then, whisk in the buttermilk and vanilla until combined. Pour the wet ingredients into the dry ingredients and whisk gently, avoiding over-mixing; small lumps are acceptable.
- Grease the preheated waffle maker with nonstick spray. Pour about 1/3 cup of batter into each waffle maker well. Close the lid and cook until crisp, around 4-5 minutes. Refer to your waffle maker's specific instructions.
- Transfer the cooked waffles to the wire rack in the warm oven as you continue cooking the remaining batter. Serve immediately with your favorite toppings.
Notes
For extra flavor, you can add blueberries or chocolate chips to the batter before cooking.
These waffles can be stored in the freezer for a quick future breakfast—just reheat in the toaster.
