Description

This Blueberry Cobbler bursts with the sweetness of fresh blueberries and has a wonderfully light and flaky topping. Quick to prepare and perfect for sharing, this homemade treat is sure to satisfy your cravings.


Ingredients

  • 2 ½ cups fresh or frozen blueberries
  • ¼ cup sugar
  • grated lemon zest (optional)
  • 5 tablespoons (75g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ¾ cup (180 ml) milk
  • ½ teaspoon vanilla extract (optional)
  • coarse sugar for sprinkling on top


Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 or 9×9-inch baking dish.
  2. In a bowl, mix the blueberries with ¼ cup sugar and set aside.
  3. In another bowl, cream the unsalted butter with the remaining granulated sugar.
  4. Add the flour, baking powder, salt, milk, and vanilla extract to the butter mixture.
  5. Stir until combined, then pour the batter into the baking dish.
  6. Spoon the blueberry mixture over the batter, then sprinkle with coarse sugar.
  7. Bake for 50 minutes or until golden and bubbly.

Notes

Serving warm enhances the flavor.
Add a scoop of vanilla ice cream for extra deliciousness.
