- 2 ½ cups fresh or frozen blueberries
- ¼ cup sugar
- grated lemon zest (optional)
- 5 tablespoons (75g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup (100g) granulated sugar
- ¾ cup (180 ml) milk
- ½ teaspoon vanilla extract (optional)
- coarse sugar for sprinkling on top
Instructions
- Preheat the oven to 350°F and prepare an 8×8 or 9×9-inch baking dish.
- In a bowl, mix the blueberries with ¼ cup sugar and set aside.
- In another bowl, cream the unsalted butter with the remaining granulated sugar.
- Add the flour, baking powder, salt, milk, and vanilla extract to the butter mixture.
- Stir until combined, then pour the batter into the baking dish.
- Spoon the blueberry mixture over the batter, then sprinkle with coarse sugar.
- Bake for 50 minutes or until golden and bubbly.

Serving warm enhances the flavor.
