Ingredients
Scale
- 4 ½ to 5 cups all purpose flour
- 4 ½ teaspoons instant yeast (2 packets)
- 3 tablespoons light brown sugar
- 1 teaspoon fine sea salt
- 1 ½ cups water
- 6 tablespoons unsalted butter, cut into pieces
- 1 large egg
- 13 ounces blueberry preserves
- 3 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- ½ teaspoon pure vanilla extract
- 2 cups powdered sugar, sifted
- 1 to 2 tablespoons milk
Instructions
- In a stand mixer fitted with a dough hook, combine 2 cups of flour, yeast, sugar, and salt; stir until blended.
- In a microwave-safe bowl, warm the water and butter in 15-second increments until warm (around 120° to 130°F), then add to the flour mixture along with the egg.
- Beat for 2 minutes at medium speed, scraping the bowl as needed. Add 1 cup of flour and beat for another 2 minutes at high speed, scraping again. Gradually stir in enough remaining flour to form a ball of dough.
- Knead the dough on a floured surface until smooth and elastic, about 6 to 8 minutes. Cover with a towel and let rest for 10 minutes.
Notes
The warm water should not be hot to the touch; aim for around 120° to 130°F.
You can substitute the blueberry preserves with other fruit preserves if desired.
Allow the rolls to cool slightly before applying the cream cheese frosting for best results.
