- 1 (19 ounce) bag tortellini, cooked & drained
- 1 tablespoon olive oil
- 1 pound ground hamburger
- 1/2 cup diced red onions
- 2 tablespoons minced garlic
- 2 cups baby spinach leaves
- 2 cups halved cherry tomatoes
- 1 teaspoon paprika
- 2 tablespoons all purpose flour
- 1 1/2 cups 2% milk
- 3 cups triple cheddar cheese, divided
- 1 cup cooked crumbled bacon
- salt and pepper, to taste
Instructions
- Cook the tortellini according to the package directions. Drain and mix with 1 tablespoon of olive oil to prevent sticking.
- In a large skillet, cook the hamburger, diced onions, and minced garlic until the meat is thoroughly cooked. Drain excess grease.
- Add the spinach, halved cherry tomatoes, and paprika to the skillet, cooking until the spinach wilts and tomatoes start to burst.
- Sprinkle the mixture with flour, stir well, and cook for 1 minute.
- Whisk in the milk and cook until the mixture slightly thickens. Stir in 2 3/4 cups of cheese until melted and creamy.
- Add the cooked tortellini and crumbled bacon, mixing until everything is well-coated. Sprinkle with the remaining cheese and cover until melted. Season with salt and pepper to taste.
Notes
For extra flavor, feel free to add your favorite herbs or spices.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
