Description

These Cinnamon Bun Bites deliver irresistible flavor with simple preparation. Made with flour, eggs, and cinnamon, they are perfect for a cozy dessert or snack.


Ingredients

  • 2 teaspoons coarse salt
  • 4 large eggs
  • 4 1/2 cups all-purpose flour, plus more if needed
  • 2 tablespoons ground cinnamon
  • 1 envelope instant yeast
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar, divided
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup warm water
  • 2 tablespoons whole milk


Instructions

  1. In a stand mixer bowl, combine warm water, yeast, and 1/2 cup of flour to form a thick paste.
  2. Mix in eggs, 1/4 cup sugar, and salt until combined.
  3. Attach the dough hook and add the remaining 4 cups of flour, kneading on medium speed for 4 to 5 minutes until smooth.
  4. Add room temperature butter and knead until incorporated and the dough is elastic, about 10 minutes. Add more flour if the dough is sticky.
  5. Transfer the dough to a clean bowl, cover, and let rise until doubled, about 1.5 to 2 hours.
  6. Punch down the dough to release air bubbles. Lightly butter a 9-inch pie plate.
  7. In a small bowl, mix the remaining 1 cup sugar and cinnamon.
  8. Shape the dough into 1-inch balls, dip each in melted butter, roll in cinnamon sugar, and place in the prepared pie plate, stacking to form a dome.
  9. Cover with plastic wrap and let rise for an additional hour.
  10. Preheat the oven to 350°F and place the pie plate on a baking sheet.
  11. Bake for 50 to 55 minutes until golden and firm.
  12. Prepare the glaze by whisking together sugar, salt, butter, milk, and vanilla until smooth.
  13. Let the bites cool for 15 minutes before drizzling with glaze and serve warm.
