- 2 (15-ounce) cans black beans, drained and rinsed
- 1 (15-ounce) can black-eyed peas, drained and rinsed
- 1 large red bell pepper, seeded and diced
- 1 large yellow bell pepper, seeded and diced
- 2 fresh jalapeños, seeded and diced
- 1 ½ cups frozen corn kernels, thawed and drained
- ½ cup finely diced red onion
- ½ cup finely chopped fresh cilantro
- 1 cup fresh seeded and diced tomato, optional
- 2 fresh avocados, diced and added just before serving, optional
- ¼ cup red wine vinegar
- 2 heaping tablespoons honey
- 1 fresh lime, juiced
- 1 tablespoon fine sea salt
- 2 chipotles in adobo plus 2 teaspoons sauce from the can
- 1 cup avocado or vegetable oil
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
Instructions
- In a large bowl, mix the beans, bell peppers, corn, onion, cilantro, and optional tomatoes.
- Blend red wine vinegar, honey, lime juice, salt, chipotles, and sauce until combined. Gradually add oil while blending to emulsify the dressing. Mix in oregano and black pepper, adjusting seasonings as needed.
- Pour half the dressing over the bean mixture and stir. Cover and refrigerate for at least 3 hours before serving.
- Before serving, stir the Cowboy Caviar and add more dressing if desired. Incorporate diced avocado just before serving as an option. Store any leftover dressing in the refrigerator.
- Serve with tortilla chips or as a tasty topping for tacos.
Notes
For a spicier flavor, keep the seeds of the jalapeños.
