Ingredients
Scale
- 1 9 inch store bought pie crust
- 4 cups fresh strawberries sliced
- 1 3 oz strawberry jello package
- 1 cup water
- 5-6 teaspoons cornstarch
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- pinch of salt
Instructions
- Preheat your oven to 425°F. Gently press the pie crust into the dish, crimp the edges, and poke a few holes in the bottom.
- Freeze the crust for about 10 minutes to maintain its shape. Then, line with foil and fill with pie weights.
- Bake for 10 minutes until the edges are lightly golden. Remove the foil and weights, and bake for an additional 6-7 minutes until the bottom is golden. Allow it to cool completely.
- In a saucepan, combine water, cornstarch, and sugar until smooth. Stirring continuously, heat the mixture until it bubbles and thickens.
- Remove the saucepan from heat and stir in the strawberry jello until melted. Add vanilla extract and a pinch of salt.
- Allow the mixture to cool until warm but pourable.
- Evenly spread the sliced strawberries in the cooled pie crust.
- Slowly pour the strawberry mixture over the strawberries, ensuring they are fully covered.
- Chill the pie in the refrigerator for about 3 hours until set. Serve as-is or with a scoop of ice cream.
Notes
Ensure the pie crust is fully cooled before adding the strawberries and filling.
For a smoother filling, whisk the cornstarch mixture continuously to prevent lumps.
Customize the topping with whipped cream or additional fruit for extra flavor.
