  • 1 9 inch store bought pie crust
  • 4 cups fresh strawberries sliced
  • 1 3 oz strawberry jello package
  • 1 cup water
  • 5-6 teaspoons cornstarch
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • pinch of salt


Instructions

  1. Preheat your oven to 425°F. Gently press the pie crust into the dish, crimp the edges, and poke a few holes in the bottom.
  2. Freeze the crust for about 10 minutes to maintain its shape. Then, line with foil and fill with pie weights.
  3. Bake for 10 minutes until the edges are lightly golden. Remove the foil and weights, and bake for an additional 6-7 minutes until the bottom is golden. Allow it to cool completely.
  4. In a saucepan, combine water, cornstarch, and sugar until smooth. Stirring continuously, heat the mixture until it bubbles and thickens.
  5. Remove the saucepan from heat and stir in the strawberry jello until melted. Add vanilla extract and a pinch of salt.
  6. Allow the mixture to cool until warm but pourable.
  7. Evenly spread the sliced strawberries in the cooled pie crust.
  8. Slowly pour the strawberry mixture over the strawberries, ensuring they are fully covered.
  9. Chill the pie in the refrigerator for about 3 hours until set. Serve as-is or with a scoop of ice cream.
