- ¾ cup (90 g) confectioners' sugar
- ½ teaspoon kosher salt
- 1 tablespoon fresh key lime zest
- 2 tablespoons key lime juice, or regular lime juice
- ½ teaspoon vanilla extract
- 2 ¼ cups (280 g) all-purpose flour
- 4 ounces cream cheese, room temperature
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature
- 2 to 2 ½ cups (240 g to 300 g) confectioners' sugar
- 1 tablespoon key lime juice
- 1 teaspoon key lime zest
- 1 pinch kosher salt
Instructions
- Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
- In a large bowl, cream the softened butter, confectioners’ sugar, salt, and key lime zest together until light and fluffy, for about 3 to 4 minutes.
- Incorporate the key lime juice and vanilla extract, mixing until combined.
- Gradually add the flour, mixing just until a soft dough forms; be careful not to overmix.
- Scoop the dough into portions of about 2 tablespoons each, rolling them into balls and placing them on the prepared baking sheet.
- Gently flatten each cookie to approximately ½-inch thickness using the bottom of a glass.
- Bake for 10 to 13 minutes, or until the edges set and turn slightly golden.
- Allow the cookies to cool completely on the pan or transfer them to a wire rack before frosting.
Notes
For an extra flavor punch, use fresh key limes if available.
Ensure the butter is softened properly for easy mixing.
You can adjust the sugar in the frosting based on your taste preference.
