Instructions
- Preheat the oven to 350°F and grease a 10-inch bundt pan.
- In a mixing bowl, combine the granulated sugar and softened butter. Beat on medium speed until the mixture is light and fluffy, about 10 minutes.
- Add eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- In a separate bowl, whisk together the flour, kosher salt, and baking soda.
- Gradually add one-third of the flour mixture to the butter mixture, mixing on low speed until just combined.
- Pour in half of the buttermilk, mixing on low until smooth.
- Continue to alternate adding the remaining flour mixture and buttermilk, ending with the flour mixture.
- Incorporate the lemon extract and lemon zest into the batter until evenly mixed.
- Pour the batter into the prepared bundt pan, smoothing the top.
- Reduce the oven temperature to 325°F. Bake for 60 to 75 minutes, checking for doneness with a toothpick; it should come out with a few moist crumbs.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack or cake platter to cool completely.
