Description

This Seventh-day Adventist Vegetarian Special K Loaf boasts delightful flavors from cottage cheese, onions, and Special K cereal. Perfect for a fast, nutritious dinner or comforting meal option, this dish is sure to satisfy everyone’s palate.


Ingredients

  • 5 eggs, beaten
  • 1 large onion, diced & sautéed
  • 2 lbs cottage cheese
  • 9 cups special k cereal
  • 4 tbsp bragg's aminos
  • 1 cup pecan meal
  • 1/4 cup evaporated milk
  • 2 tbsp mckay's beef seasoning, optional


Instructions

  1. Preheat the oven to 350 degrees F and prepare a 9 x 13 inch pan with non-stick spray.
  2. In a large bowl, beat the eggs until mixed.
  3. Sauté the diced onion in butter until they become translucent.
  4. Add the cottage cheese, Special K cereal, Bragg's aminos, pecan meal, and evaporated milk to the beaten eggs.
  5. If desired, mix in the vegetarian beef seasoning and stir in the sautéed onions.
  6. Combine everything well and firmly press the mixture into the prepared pan.
  7. Place in the oven and bake for 45 minutes.

Notes

For added flavor, sauté onions in olive oil or your preferred cooking oil.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
