These Sourdough Biscoff Blondies are a blend of sweet browned butter, rich cookie butter, and white chocolate chunks. With simple preparation, these bars make a delightful treat for any occasion. Perfect for those looking to create a homemade dessert that’s sure to please.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, browned
  • 1 cup packed brown sugar
  • 1/4 cup biscoff cookie butter
  • 2 large eggs, room temperature
  • 1 egg yolk
  • 1/2 cup sourdough discard
  • 1 teaspoon vanilla extract
  • 4 ounces white chocolate, chopped and divided
  • 6 biscoff cookies, crushed
  • Extra biscoff cookie butter for drizzling


Instructions

  1. Preheat your oven to 350°F.
  2. Line a 9×9-inch baking pan with parchment paper and set aside.
  3. In a bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, combine the browned butter with brown sugar and mix well.
  5. Add the biscoff cookie butter, eggs, egg yolk, sourdough discard, and vanilla extract to the butter mixture. Stir until smooth.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chopped white chocolate and crushed biscoff cookies.
  8. Pour the batter into the prepared baking pan and spread evenly.
  9. Bake for 30-37 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool slightly, then drizzle with extra biscoff cookie butter before slicing.

Notes

For a richer flavor, be sure to brown the butter properly.
