- 1/4 cup biscoff cookie butter
- 2 large eggs, room temperature
- 1 egg yolk
- 1/2 cup sourdough discard
- 1 teaspoon vanilla extract
- 4 ounces white chocolate, chopped and divided
- 6 biscoff cookies, crushed
- Extra biscoff cookie butter for drizzling
Instructions
- Preheat your oven to 350°F.
- Line a 9×9-inch baking pan with parchment paper and set aside.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the browned butter with brown sugar and mix well.
- Add the biscoff cookie butter, eggs, egg yolk, sourdough discard, and vanilla extract to the butter mixture. Stir until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped white chocolate and crushed biscoff cookies.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-37 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly, then drizzle with extra biscoff cookie butter before slicing.
Notes
For a richer flavor, be sure to brown the butter properly.
